22 Lazy Dinner Recipes For Your Picky Family

22 Lazy Dinner Recipes For Your Picky Family

Just about every list of “easy” dinner recipes I come across has a roundup of meals that require a long list of ingredients, a dozen dirty dishes to wash, and take up your entire night chopping, prepping, boiling, simmering, and then 30 minutes cleaning up the mess. Hard pass!

So I decided to do something about it. I’ve pulled together a collection of family-friendly meals that are ACTUALLY easy to make — the kind you turn to on those nights when you’re completely over cooking and just want to kick back, relax, and maybe enjoy a glass of wine while your favorite show plays in the background.

Every recipe on this list is budget-friendly, totally customizable, and way cheaper than hitting the drive-through. I genuinely love cooking — just not when I’ve had a brutal day at work and feel like I’ve been hit by a bus. But the family still has to eat, so here we are. Here you go.

The easiest dinners you’ll ever make!

1. Lazy Lasagna

Who says lasagna has to take all night? This genius 3-ingredient version uses frozen ravioli instead of traditional pasta sheets, so all you do is layer, top with sauce and cheese, and bake. It’s rich, cheesy, and completely customizable — toss in ground beef, pepperoni, sausage, or veggies to make it your own. Ready in one dish with less than 5 minutes of prep work.

Lazy Lasagna

Ingredients:

  • 1 (24oz) bag frozen ravioli
  • 1 (24oz) jar pasta sauce
  • 2 cups shredded mozzarella

Instructions: Layer frozen ravioli in a greased baking dish, top with pasta sauce and mozzarella, and repeat layers. Cover with foil and bake at 400°F for 40 minutes. Remove foil and bake another 10 minutes until bubbly.

2. Taco Macaroni & Cheese

Two dinner-time classics collide most gloriously. Velveeta mac meets taco-seasoned ground beef and Rotel tomatoes for a creamy, spicy, kid-approved bowl of comfort food. This one comes together on the stovetop in under 30 minutes and is the kind of meal that gets requested again and again.

Taco Macaroni & Cheese

Ingredients:

  • 1 pound ground beef
  • 2 boxes Velveeta macaroni

  • 1 packet taco seasoning

Instructions: Cook mac according to the box directions. Brown ground beef with taco seasoning, drain fat. Stir in drained Rotel and combine with prepared mac and cheese. Serve hot.

3. No-Peek Chicken Casserole

Dump everything in a dish, cover it, and walk away. That’s the beauty of this no-fuss dinner. The result is a silky, flavorful casserole that feels like something your grandma would make — without any of the actual effort.
