Step 3: Heat a lightly greased griddle or skillet over medium-high heat. Pour about ¼ cup of batter for each pancake onto the hot surface. Cook for 1 to 2 minutes, or until bubbles appear on top and the edges begin to set. Flip and cook the other side until golden brown. Continue with the remaining batter.

STORAGE 

Leftover pancakes keep well in the fridge for up to 3 days in an airtight container. To reheat, pop them in the toaster or microwave for about 30 seconds — the toaster gives a slightly crispier edge, which some people prefer. For longer storage, lay them flat in a single layer on a baking sheet, freeze until solid, then transfer to a zip-lock bag. They’ll keep in the freezer for up to 2 months.
