Ingredient notes

  • Olive oil — Use a good quality extra-virgin olive oil here. It handles the initial high heat well and adds a subtle fruitiness to the base of the dish.
  • Shrimp, peeled and deveined — Large or extra-large shrimp work best since they hold up to the high heat without overcooking. Fresh or thawed frozen both work — just make sure they’re fully dry before they hit the pan.
  • Salt — Used to season the shrimp as they cook. Don’t skip this step; it draws out moisture and helps the shrimp develop better color.
  • Garlic, finely minced — Freshly minced garlic is non-negotiable here. Pre-minced jarred garlic lacks the punch you need in a sauce this simple.
  • Red pepper flakes — These add a gentle, lingering heat without overwhelming the dish. Adjust the amount up or down based on your preference.
  • Lemon juice — Freshly squeezed is strongly preferred. It brightens the entire sauce and balances the richness of the butter.
  • Caper brine — This is the flavor secret most people overlook. The brine is tangy and briny and adds a savory depth that makes the sauce taste complex without any extra effort.
  • Cold butter, cut into 4 equal pieces — Cold butter is key — adding it in pieces off or over low heat emulsifies the sauce into something glossy and silky rather than greasy.
  • Flat-leaf parsley, chopped — Flat-leaf (Italian) parsley has more flavor than curly parsley. Half goes into the sauce for flavor, and the rest is used as a fresh garnish.
  • Water — Just a teaspoon at a time, used to loosen the sauce if it thickens too much as it reduces.

How To Make It

Step 1: Prepare and measure all ingredients before you begin cooking.

Step 2: Heat the olive oil in a large heavy skillet over high heat until it starts to lightly smoke. Arrange the shrimp in a single layer and cook undisturbed for 1 minute.

Step 3: Sprinkle the shrimp with salt, then stir and cook for another minute, or until they begin turning pink.

Step 4: Add the garlic and red pepper flakes, stirring constantly for about 1 minute until fragrant.

Step 5: Pour in the lemon juice and caper brine, then add one piece of butter and half of the parsley. Stir until the butter melts completely.

Step 6: Lower the heat and add the remaining butter pieces. Continue stirring until the butter melts, the sauce thickens, and the shrimp are fully cooked and opaque, about 2–3 minutes.

Step 7: Using a slotted spoon, transfer the shrimp to a serving bowl. Let the sauce simmer for another 2 minutes, adding a teaspoon of water at a time if it becomes too thick.

Step 8: Taste and adjust the seasoning with salt if needed. Spoon the buttery pan sauce over the shrimp, garnish with the remaining parsley, and serve immediately.

Storing leftovers

Let the shrimp and sauce cool completely before storing. Transfer to an airtight container and refrigerate for up to 2 days. To reheat, warm gently in a skillet over low heat with a small splash of water to loosen the sauce — avoid high heat, which will make the shrimp rubbery. This dish is not ideal for freezing, as shrimp tend to turn mushy after thawing a second time.

Ingredients

  • 1 ½ tablespoons olive oil
  • 1 pound shrimp peeled and deveined
  • salt to taste
  • 6 cloves garlic finely minced
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons lemon juice
  • 1 tablespoon caper brine
  • 2 tablespoons cold butter cut into 4 equal pieces, divided
  • ⅓ cup chopped flat-leaf parsley divided
  • 1 teaspoon water or as needed

Notes

  • Make sure shrimp are completely dry before they hit the pan — moisture causes steaming, not searing.
  • Cold butter added gradually is what makes the sauce silky and glossy rather than greasy. Don’t rush it.
  • No caper brine? A small splash of white wine vinegar or extra lemon juice works as a substitute.
  • Leftovers keep in an airtight container in the refrigerator for up to 2 days. Reheat gently over low heat with a splash of water — high heat will make the shrimp rubbery.
  • This dish is not recommended for freezing.
