Why You’ll Love This Recipe

  • Three layers of creamy goodness — sour cream, cream cheese, and sharp cheddar create a rich, tangy filling that kids and adults both devour.
  • Budget-friendly and forgiving. Stretch it with extra noodles, swap the beef for turkey, or use whatever cheese you have on hand.
  • One dish, minimal cleanup. Everything comes together in under an hour using just a skillet, a pot, and a casserole dish.
  • Freezer-friendly. Assemble ahead, freeze before baking, and pull it out on busy weeknights whenever you need dinner fast.

Ingredients Notes

  • Ground Beef – The hearty base of this casserole, browned and crumbled until rich and savory before layering.
  • Tomato Sauce – Coats the beef in a tangy, deeply flavored sauce that ties the whole dish together.
  • White Sugar – Just a small pinch to balance the acidity of the tomato sauce without making it sweet.
  • Garlic Salt – Seasons the meat layer with a gentle, savory garlic note throughout every bite.
  • Salt – Added to taste at each stage to keep every layer properly seasoned from start to finish.
  • Egg Noodles – Wide, tender noodles that soak up all the saucy, creamy goodness as the casserole bakes.
  • Sour Cream – Adds a cool, tangy richness to the cream layer that balances the bold beef sauce perfectly.
  • Cream Cheese – Softened and blended into the filling, it creates the thick, velvety center everyone loves.
  • White Onion – Finely diced and folded into the cream layer, it softens while baking and adds a mild, sweet bite.
  • Sharp Cheddar Cheese – Sprinkled generously on top, it melts into a golden, bubbly crust that makes the whole dish irresistible.

How To Make It

Step 1

Heat a large skillet over medium-high. Add ground beef and cook 5–7 minutes, breaking it up as it goes, until fully browned and crumbly. Drain off the fat.

Step 2

Stir in the tomato sauce, sugar, garlic salt, and salt. Reduce the heat to low, cover, and let the sauce simmer for 20 minutes so the flavors meld together. Take off the heat when done.

Step 3

Meanwhile, bring a large pot of well-salted water to a boil. Cook egg noodles 7–9 minutes — they should be just barely done. Drain and set aside.

Step 4

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 5

In a bowl, stir together the softened cream cheese, sour cream, and diced onion until smooth and evenly combined.

Step 6

Layer half the noodles in the dish. Spread half the cream cheese mixture over them, then spoon half the beef sauce on top. Repeat the layers once more — noodles, cream cheese mixture, beef sauce.

Step 7

Scatter shredded cheddar evenly over the top. Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly. Let it rest 5 minutes before serving.

Storing leftovers

Fridge: Cool completely, cover tightly, and store up to 4 days. Reheat covered in a 325°F oven or microwave.

Freezer: Freeze portions in airtight containers up to 3 months. Thaw overnight in the fridge before reheating.

Note: The cream cheese layer may separate slightly after freezing — stir gently when reheating, and it comes back together.
