Air Fryer Chicken Wings

Crispy on the outside, juicy on the inside — these air fryer wings come together in under 20 minutes with a simple spice rub and one secret ingredient that takes the crunch to another level. No marinating needed.

Ingredients
  

  • 2 lbs chicken wings split into flats and drummettes
  • 1 tbsp neutral oil avocado or vegetable oil
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions
 

  • Dry the wings — Pat the chicken wings thoroughly dry with paper towels and place them in a large bowl. Removing surface moisture is the single most important step for crispy skin.
  • Oil them up — Drizzle the oil over the wings and toss until each piece is lightly and evenly coated.
  • Mix and season — In a small bowl, combine the salt, pepper, paprika, garlic powder, onion powder, and baking powder. Sprinkle the mixture over the wings and toss well to coat every piece evenly.
  • Arrange in the basket — Place the wings in a single layer in the air fryer basket, leaving a little space between each one for airflow. Do not stack or overcrowd.
  • Air fry — Cook at 400°F for 8 minutes. Shake the basket to flip the wings, then continue cooking for another 8–12 minutes until the skin is deeply golden and crisp.
  • Check doneness — Use an instant-read thermometer to confirm the thickest part of the wing reaches at least 165°F. For even better texture and flavor, let them reach 175–185°F.
  • Sauce and serve — Toss with your favorite sauce or serve with dipping sauce on the side. Always sauce after cooking to keep the skin crispy.

Notes

 
  • Baking powder is the secret to extra-crispy skin — don't skip it. Use about 1 tsp per pound of wings.
  • Always cook in a single layer. Crowding the basket traps steam and leads to soggy wings.
  • These wings work with any sauce — buffalo, garlic parmesan, honey sriracha, BBQ, or just a classic ranch on the side.
  • Leftovers reheat beautifully in the air fryer at 375°F for 4–5 minutes.
