Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup unsalted butter melted and slightly cooled
  • ¼ cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • ¾ cup fresh or frozen cranberries
  • ½ cup chopped walnuts or pecans
  • 2-4 tablespoons milk as needed

Instructions

  • Prepare the Ingredients: Gather the ingredients. Zest and juice the orange, chop the walnuts, and prepare the cranberries. Lightly grease two suitable mini loaf pans.
  • Mix the Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  • Mix the Wet Ingredients: In a separate bowl, whisk together the egg, melted butter, orange juice, orange zest, and vanilla extract until smooth.
  • Combine the Batter: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Fold in the cranberries and chopped walnuts. Add a little milk only if needed to achieve a thick, spoonable batter.
  • Fill the Mini Loaf Pans: Divide the batter between the prepared mini loaf pans, leaving room at the top for the bread to rise. Make sure the pans fit comfortably inside your air fryer.
  • Air Fry the Mini Loaves: Preheat the air fryer if recommended by the manufacturer. Place the pans in the basket and bake at approximately 320°F, checking for doneness after about 20 minutes. Continue baking as needed until a toothpick inserted into the center comes out clean or with a few moist crumbs. Adjust the temperature and time for your air fryer.
  • Cool the Bread: Carefully remove the pans from the air fryer. Let the loaves rest in the pans for about 10 minutes before transferring them to a wire rack to cool.
  • Serve and Enjoy: Slice the cranberry orange nut bread and serve it slightly warm or at room temperature. Enjoy it with butter, coffee, or tea. Add an optional orange glaze after the loaves have cooled completely.
