Ingredients

  • 4 large portobello mushroom caps stems removed
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano or Italian seasoning
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 4 burger buns
  • 4 lettuce leaves
  • 1 medium tomato sliced
  • ¼ medium red onion thinly sliced
  • 4 slices cheese optional
  • 4 tablespoons burger sauce optional, to taste

Instructions

  • Prepare the mushrooms: Gently wipe the portobello mushrooms clean with a damp paper towel. Remove the stems and pat the caps dry. Scrape out the dark gills with a spoon if desired, then set the mushrooms aside.
  • Make the marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, soy sauce, minced garlic, dried oregano, salt, and black pepper until combined.
  • Marinate the mushrooms: Place the mushrooms in a shallow dish and brush the marinade over both sides. Let them marinate for 15 minutes, turning once so they absorb the flavor evenly.
  • Air fry the mushrooms: Preheat the air fryer to 375°F (190°C), if required by your model. Arrange the mushrooms in a single layer and cook for approximately 8–10 minutes, checking for tenderness and turning halfway through if needed. Larger caps may need a little extra time.
  • Assemble and serve: Toast the burger buns if desired. Add lettuce to each bottom bun, followed by a cooked portobello mushroom, tomato, red onion, cheese, and your preferred sauce. Add the top bun and serve warm.

Notes

  • Choose large, firm portobello mushroom caps that are similar in size for even cooking.
  • Pat the mushrooms dry before marinating to encourage better browning.
  • Marinate for at least 15 minutes for more flavor; you can marinate longer in the refrigerator.
  • Arrange the mushrooms in a single layer in the air fryer basket. Cook in batches if necessary.
  • Cooking time depends on mushroom thickness and your air fryer model. Cook until tender but still sturdy enough to hold on a bun.
  • Use gluten-free soy sauce and gluten-free buns if needed.
  • Store cooked mushrooms separately from buns and fresh toppings in an airtight container in the refrigerator for 3–4 days.
  • Reheat mushrooms in the air fryer at 350°F (175°C) for 3–5 minutes, or until warmed through.
  • Freezing is possible for up to 2 months for best quality, although the mushrooms may become softer after thawing.
