- 2 cups All-purpose flour
- 2 teaspoons Baking powder
- ½ teaspoon Baking soda
- 2 teaspoons Ground cinnamon
- ¼ teaspoon Salt
- ½ cup Brown sugar
- ¼ cup Granulated sugar
- 2 large eggs
- ½ cup Unsalted butter melted
- ½ cup Milk
- 1 teaspoon Vanilla extract
- 2 cups Apples peeled and diced
- 2 tablespoons Cinnamon sugar optional topping
Preheat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease the pan.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, brown sugar, and granulated sugar until well combined.
In a separate bowl, whisk together the eggs, melted butter, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing.
Fold the diced apples into the batter until evenly distributed.
Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. Sprinkle the tops with cinnamon sugar if desired.
Bake for 20–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm or at room temperature with butter, honey, or your favorite hot beverage.
- Honeycrisp, Gala, Fuji, or Granny Smith apples all work well.
- Do not overmix the batter to keep the muffins soft and fluffy.
- Sprinkle coarse cinnamon sugar on top for a bakery-style finish.
- Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
- Warm refrigerated muffins in the microwave for 15–20 seconds before serving.
