Ingredients
  

  • 1 loaf French bread sliced
  • 1 tablespoon extra-virgin olive oil for brushing bread
  • 4 Roma plum tomatoes, diced
  • ¼ cup fresh basil chopped
  • ½ cup Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 2 tablespoons balsamic vinegar good quality
  • 2 teaspoons extra-virgin olive oil for the topping
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground

Instructions
 

  • Preheat the oven to 400°F (200°C). Gather all ingredients.
    2. Brush bread slices on both sides lightly with 1 tablespoon olive oil and place on a large baking sheet. Toast until golden, about 5–10 minutes, turning halfway through.
    3. Meanwhile, toss together the tomatoes, basil, Parmesan, and garlic in a bowl.
    4. Mix in the balsamic vinegar, 2 teaspoons olive oil, kosher salt, and pepper.
    5. Spoon the tomato mixture onto the toasted bread slices.
    6. Serve immediately and enjoy!

Notes

 
For the best flavor, use ripe, in-season tomatoes and assemble just before serving so the bread stays crisp.
