Ingredients
  

Pie Crust

  • 1 9-inch baked pie crust

Banana Cream Filling

  • 3 ripe bananas sliced
  • 2 cups whole milk
  • ¾ cup granulated sugar
  • 4 large large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter

Whipped Cream Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Bake the pie crust according to the recipe or package directions until lightly golden and crisp. Allow it to cool completely before adding the filling.
  • Slice the bananas into even rounds. Arrange a layer of banana slices evenly over the cooled pie crust.
  • In a medium saucepan, whisk together the milk, granulated sugar, egg yolks, and cornstarch until smooth.
  • Cook the mixture over medium heat, whisking constantly, until it thickens into a smooth custard. Do not leave the mixture unattended while cooking.
  • Remove the saucepan from the heat. Stir in the vanilla extract and butter until the butter melts completely and the filling becomes smooth.
  • Pour the warm custard over the banana slices. Spread it evenly with a spatula so the bananas are completely covered.
  • Cover the surface loosely and refrigerate the pie until completely chilled and set, preferably for at least 4 hours.
  • For the topping, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft, fluffy peaks form.
  • Spread or pipe the whipped cream over the chilled pie. Garnish with additional banana slices just before serving.
  • Slice and serve the Banana Cream Pie chilled.

  • Use firm, ripe bananas rather than very soft or overripe bananas for the best texture.
  • Whisk the custard continuously while cooking to prevent lumps.
  • Allow the pie to chill completely before slicing so the layers hold together.
  • Add the decorative banana slices immediately before serving to reduce browning.
