Ingredients
  

  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon optional
  • 1 cup chopped walnuts plus extra for topping (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • Mash the ripe bananas in a large mixing bowl until mostly smooth.
  • Add the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until fully combined.
  • Incorporate the flour, baking soda, salt, and cinnamon. Stir gently until just combined. Avoid overmixing.
  • Fold the chopped walnuts into the batter using a rubber spatula.
  • Pour the batter into the prepared loaf pan and sprinkle extra walnuts over the top if desired.
  • Bake for 55–65 minutes, or until a toothpick inserted into the centre comes out clean.
  • Let the bread cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
  • Slice and serve warm or at room temperature.

Notes

 
  • Use bananas with plenty of brown spots for the sweetest flavour.
  • Don't overmix the batter or the bread may become dense.
  • Toast the walnuts before adding them for extra flavour.
  • Tent the loaf with foil during the last 15 minutes if it browns too quickly.
  • Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
