- 3 ripe bananas mashed
- 2 cups all-purpose flour
- ½ cup brown sugar packed
- ¼ cup granulated sugar
- ½ cup unsalted butter melted
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon optional
- 1 cup chopped walnuts plus extra for topping (optional)
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
Mash the ripe bananas in a large mixing bowl until mostly smooth.
Add the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until fully combined.
Incorporate the flour, baking soda, salt, and cinnamon. Stir gently until just combined. Avoid overmixing.
Fold the chopped walnuts into the batter using a rubber spatula.
Pour the batter into the prepared loaf pan and sprinkle extra walnuts over the top if desired.
Bake for 55–65 minutes, or until a toothpick inserted into the centre comes out clean.
Let the bread cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
Slice and serve warm or at room temperature.
