Buttery Lamb Chops – Juicy and Delicious

Juicy, tender lamb chops seared until golden and finished with rich garlic herb butter for an easy restaurant-style dinner at home.

Ingredients
  

  • 8 lamb chops
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 1 tbsp fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions
 

  • Pat the lamb chops dry with paper towels. Season both sides evenly with salt and freshly ground black pepper. Let them sit at room temperature briefly while you heat the skillet.
  • Heat a heavy-bottomed skillet over medium-high heat. Add the olive oil and allow it to become hot before adding the lamb chops.
  • Place the lamb chops in the hot skillet without overcrowding the pan. Sear until the first side is deeply golden brown, then turn and sear the other side.
  • Reduce the heat slightly and add the butter, smashed garlic, rosemary, and thyme to the skillet.
  • Once the butter melts and begins to foam, tilt the skillet slightly and repeatedly spoon the garlic herb butter over the lamb chops.
  • Continue cooking until the lamb reaches your desired doneness. For food safety, lamb chops should reach an internal temperature of 145°F (63°C), followed by a three-minute rest.
  • Transfer the lamb chops to a plate and let them rest for a few minutes. Spoon some of the garlic herb butter from the skillet over the lamb.
  • Finish with a squeeze of fresh lemon juice and serve immediately with your favorite side dishes.

Notes

 
For the best results, pat the lamb chops dry before seasoning and make sure the skillet is hot before searing. Avoid overcrowding the pan so the lamb develops a beautiful golden-brown crust. Basting the chops with garlic, rosemary, thyme, and butter adds extra richness and flavor. Let the lamb rest for a few minutes before serving to help keep it juicy and tender.
