Ingredients
  

  • 1 box yellow or spice cake mix
  • 1 can pure pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup chocolate chips optional
  • ½ cup chopped pecans optional

Instructions
 

  • Prepare the Pan: Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
  • Mix the Wet Ingredients: n a large mixing bowl, combine the pumpkin puree, eggs, vegetable oil, and vanilla extract. Whisk until smooth and well combined.
  • Add the Cake Mix and Spices: Add the cake mix, pumpkin pie spice, and salt to the pumpkin mixture. Stir gently with a spatula until the ingredients are just combined. Do not overmix.
  • Add Optional Mix-Ins: Gently fold in the chocolate chips and chopped pecans if using. Reserve a small amount of each for sprinkling over the top if desired.
  • Fill the Loaf Pan: Pour the batter into the prepared loaf pan. Smooth the top with a spatula and sprinkle with additional chocolate chips or pecans if desired.
  • Bake the Bread: Bake for about 50–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  • Cool the Loaf: Allow the bread to cool in the pan for about 10 minutes. Carefully transfer it to a wire rack and allow it to cool further before slicing.
  • Slice and Serve: Slice the cooled pumpkin bread with a sharp serrated knife. Serve plain, with butter, cream cheese, or your favorite fall-inspired topping.

Notes

 
  • For the best texture, use pure pumpkin puree rather than pumpkin pie filling. Avoid overmixing the batter once the cake mix is added, as this can make the bread heavier.
  • Chocolate chips and chopped pecans are optional, so the loaf can easily be customized to suit your taste. Allow the bread to cool before slicing so the crumb has time to set.
  • Store leftover pumpkin bread in an airtight container. Refrigerate if adding a cream cheese topping, and freeze individual slices for longer storage.
