- 4 large russet potatoes
- 1 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup cooked Italian sausage crumbled
- ½ cup pepperoni slices
- ½ cup diced bell pepper
- ¼ cup diced red onion
- ¼ cup sliced black olives
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley or basil
Preheat the oven to 400°F (200°C). Wash and dry the potatoes, then pierce each several times with a fork.
Bake the potatoes for 45–50 minutes, or until tender when pierced with a knife.
While the potatoes bake, cook the Italian sausage in a skillet until browned. Drain any excess grease.
Slice the baked potatoes in half lengthwise and carefully scoop out some of the potato, leaving a thin layer inside each skin.
In a bowl, combine the scooped potato, pizza sauce, mozzarella, cheddar, sausage, pepperoni, bell pepper, onion, olives, Italian seasoning, and garlic powder.
Spoon the filling evenly into each potato shell.
Sprinkle the tops with Parmesan cheese and a little extra mozzarella.
Return the stuffed potatoes to the oven and bake for 10–15 minutes, until the cheese is melted and bubbly.
Garnish with chopped parsley or basil before serving.
