Instructions
 

  • Prepare the Bread: Preheat your oven to 350°F. Lightly grease a 9x13-inch baking dish. Cut the brioche bread into bite-sized pieces and spread them evenly in the prepared dish.
  • Make the Cinnamon Custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, ground cinnamon, vanilla extract, melted butter, and salt until smooth and well combined.
  • Pour the Custard Over the Bread: Slowly pour the cinnamon custard evenly over the bread pieces. Gently press the bread down with a spatula so the pieces can absorb the custard.
  • Let It Soak: Let the casserole rest for about 30 minutes. This gives the brioche enough time to soak up the custard, creating a soft and rich center when baked.
  • Add the Cinnamon Topping: In a small bowl, combine the brown sugar and ground cinnamon. Sprinkle the mixture evenly over the soaked bread, then scatter the small pieces of butter over the top.
  • Bake: Place the casserole in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the center is set. Remove it from the oven and let it cool slightly.
