Cobb Salad Recipe (High-Protein Salad)

A hearty, protein-packed Chicken Cobb Salad loaded with crisp romaine, juicy tomatoes, smoky bacon, tender chicken, creamy avocado, hard-boiled eggs, and crumbled blue cheese — all topped with a tangy homemade dressing you'll want to put on everything.

Ingredients
  

Chicken Cobb Salad Ingredients:

  • 6 oz bacon (6 slices) chopped and browned
  • 1 medium head romaine lettuce 5 cups chopped, rinsed and dried
  • 2 cooked chicken breasts
  • 2 hard-boiled eggs
  • 1 large large avocado sliced
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • ½ cup blue cheese crumbled (or feta cheese or goat cheese)
  • 2 Tbsp parsley or chives, finely chopped, optional

For the Cobb Salad Dressing:

  • 3 tbsp Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • 1 clove Garlic minced
  • Salt and black pepper — to taste

Instructions
 

  • Cook your proteins. Bake or grill the chicken breasts until fully cooked through, then set aside to cool and slice. Cook bacon until crispy using your preferred method — air fryer, oven, or skillet. Drain on paper towels. Hard-boil your eggs, cool them in an ice bath, then peel and halve them.
  • Prep the lettuce. Chop the romaine into bite-sized pieces, rinse thoroughly, and spin dry using a salad spinner. Arrange it in an even layer across a large shallow serving platter.
  • Arrange the toppings. Working in neat rows across the lettuce, arrange the sliced chicken, crumbled bacon, halved eggs, cherry tomatoes, avocado slices, crumbled blue cheese, and red onion slices. Sprinkle finely chopped parsley over the top.
  • Make the dressing. Add all dressing ingredients to a mason jar, seal tightly, and shake vigorously until well combined. Taste and adjust seasoning as needed.
  • Serve. Drizzle the dressing over the salad just before serving, or serve it on the side so guests can dress their own portions.

Notes

 
  • Make ahead: The entire salad (minus avocado and dressing) can be assembled up to 2–3 hours ahead and kept covered in the refrigerator. Add avocado and dressing right before serving.
  • Dressing tip: Store leftover dressing in the mason jar for up to 1 week in the fridge. It will separate — just shake well before using.
  • Avocado tip: Slice avocado as close to serving time as possible to prevent browning. A squeeze of lemon juice helps slow oxidation if needed.
  • Cheese swaps: Not a blue cheese fan? Crumbled feta or soft goat cheese are excellent alternatives.
  • Chicken shortcut: A store-bought rotisserie chicken works perfectly here and saves significant prep time.
