- 3 lb potatoes peeled and cut into evenly sized pieces
- 1 cup mayonnaise
- 2 tbsp yellow mustard
- 2 tbsp granulated sugar
- 2 tbsp apple cider vinegar
- 4 large hard-boiled eggs peeled and chopped
- 2 stalks celery finely chopped
- ½ cup onion finely chopped
- ½ cup sweet pickle relish
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
Cook the Potatoes: Peel the potatoes if desired and cut them into evenly sized pieces. Place them in a large pot of salted water and bring to a boil. Cook until the potatoes are fork-tender but still firm enough to hold their shape.
Drain and Cool: Drain the potatoes thoroughly in a colander. Allow them to cool slightly before combining them with the dressing to help prevent the dressing from becoming watery.
