  • ½ teaspoon ground cinnamon

Instructions
 

  • Blend the Wet Ingredients: Add the cottage cheese, eggs, milk, maple syrup, and vanilla extract to a blender. Blend until creamy and mostly smooth.
  • Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt until evenly combined.
  • Make the Batter: Pour the blended cottage cheese mixture into the dry ingredients. Gently stir until just combined. Avoid overmixing; a few small lumps are fine.
  • Cook the Pancakes: Heat a nonstick skillet over medium heat and lightly grease with butter. Pour the batter onto the skillet to form pancakes. Cook until bubbles appear on the surface and the edges look set.
  • Flip and Finish Cooking: Carefully flip each pancake with a spatula. Cook the second side until golden brown and cooked through.
