Ingredients
  

  • 2 cups Greek yogurt — Plain or vanilla preferably thick and creamy
  • 1 large mango — Ripe and diced
  • 2 tbsp coconut milk — Full-fat for a richer texture
  • 2 tbsp shredded coconut — Unsweetened
  • 1 tbsp honey — Adjust to taste
  • 1 tbsp chia seeds — Adds texture and nutrition
  • ¼ cup granola — Add just before serving for crunch
  • 1 tsp lime juice — Freshly squeezed

Instructions
 

  • Peel and dice the ripe mango into bite-sized pieces. Reserve some mango pieces for topping the finished yogurt bowls.
  • Add the Greek yogurt and coconut milk to a mixing bowl. Stir until smooth and creamy.
  • Add the honey and fresh lime juice. Stir well and taste, adjusting the sweetness if needed.
  • Gently fold some of the diced mango into the creamy yogurt mixture.
  • Divide the mango yogurt mixture between two serving bowls.
  • Top each bowl with the remaining diced mango, shredded coconut, chia seeds, and granola.
  • Serve immediately for the best combination of creamy yogurt, juicy mango, and crunchy toppings.

Notes

 
  • Storage: Store the yogurt and mango mixture in an airtight container in the refrigerator for up to 1–2 days. Keep granola separate until serving so it stays crunchy.
  • Make Ahead: Prepare the yogurt mixture and cut the mango ahead of time. Add granola and other crunchy toppings just before serving.
  • Sweetness: If your mango is very ripe and naturally sweet, you can reduce or skip the honey.
  • Variations: Add sliced banana, berries, toasted coconut, almonds, walnuts, or almond butter for additional flavor and texture.
