Ingredients
  

  • 4 bagels
  • 8 large eggs
  • 8 slices bacon
  • 4 slices cheddar cheese
  • 1 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp green onions or chives finely chopped
  • 1 tbsp hot sauce optional
  • 1 avocado sliced, optional

Instructions
 

  • Cook the Bacon: Cook the bacon in a large skillet over medium heat until crisp and browned to your preference. Transfer it to a paper towel-lined plate to drain excess grease.
  • Toast the Bagels: Slice the bagels in half and lightly butter the cut sides. Toast until golden and crisp around the edges while keeping the centers slightly tender.
  • Prepare the Eggs: Crack the eggs into a bowl and whisk with the salt and black pepper until well combined.
  • Cook the Eggs: Melt the remaining butter in a skillet over medium-low heat. Add the beaten eggs and gently stir with a spatula until fluffy and just set. Avoid overcooking.
  • Melt the Cheese: Place a slice of cheddar cheese over each portion of warm eggs. Cover the skillet briefly and allow the cheese to melt.
  • Assemble the Bagels: Place the cheesy eggs onto the toasted bagel bottoms. Break the crispy bacon into pieces and arrange it evenly over the eggs.
  • Add Toppings: Top with chopped green onions or chives. Add avocado or a little hot sauce if desired.
  • Serve: Place the remaining bagel halves on top and gently press the sandwiches together. Serve immediately while the bacon is crisp and the cheese is warm and melted.
