Ingredients

For the Chicken Wings

  • 2 lb chicken wings split into flats and drumettes
  • 1 tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Special Spicy Sauce

  • ½ cup hot sauce
  • 2 tbsp honey
  • 2 tbsp unsalted butter
  • 2 cloves garlic finely minced
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • ½ tsp red pepper flakes optional

For Garnish

  • 2 tbsp green onions chopped

Instructions

  • Prepare the Wings: Pat the chicken wings thoroughly dry with paper towels. Removing excess moisture helps the wings develop a crispier exterior.
  • Season the Chicken: Place the wings in a large bowl. Add baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Toss until the wings are evenly coated.
  • Arrange the Wings: Line a baking sheet with parchment paper and place a wire rack on top. Arrange the seasoned wings in a single layer, leaving space between each piece.
  • Bake the Wings: Bake the wings in a preheated oven at 425°F (220°C) for about 40 minutes, turning them halfway through cooking. Continue cooking until the wings are golden brown, crisp, and fully cooked.
  • Make the Spicy Sauce: While the wings are cooking, combine hot sauce, honey, butter, minced garlic, apple cider vinegar, Worcestershire sauce, and red pepper flakes in a small saucepan. Warm over medium-low heat, stirring until the butter melts and the sauce becomes smooth.
  • Coat the Wings: Transfer the hot, crispy wings to a large bowl. Pour the warm spicy sauce over the wings and toss gently with tongs until every piece is evenly coated.
  • Garnish and Serve: Transfer the saucy wings to a serving platter. Sprinkle with chopped green onions if desired and serve immediately with your favorite dipping sauce, celery, or carrots.

Notes

  • Crispier Wings: Pat the chicken wings very dry before seasoning. Avoid overcrowding the baking sheet so hot air can circulate around each wing.
  • Adjust the Heat: Use less hot sauce or omit the red pepper flakes for a milder version. Add extra hot sauce or red pepper flakes if you prefer more heat.
  • Best Texture: Toss the wings with the sauce immediately before serving. This helps preserve some of their crispy texture.
  • Serving Idea: Serve with ranch or blue cheese dressing, celery sticks, carrot sticks, fries, or coleslaw.
  • Storage: Refrigerate leftover wings in an airtight container for up to 3–4 days. Freeze for longer storage.
  • Reheating: Reheat in an oven or air fryer until hot and crisp. Avoid relying on the microwave if you want to maintain the crispy texture.
