Ingredients
  

  • 6 large eggs
  • cup mayonnaise
  • 1 tsp mustard yellow or Dijon
  • 2 tbsp green onion diced
  • ¼ tsp salt to taste
  • ¼ tsp black pepper to taste
  • ¼ tsp paprika for garnish

Instructions
 

  • Gather all ingredients.
    2. Place eggs in a saucepan and cover completely with cold water. Bring to a boil, then immediately remove from heat. Cover and let stand in the hot water for 10–12 minutes.
    3. Remove eggs from the hot water, cool, peel, and chop into bite-sized pieces.
    4. Place chopped eggs in a bowl. Stir in mayonnaise, green onion, and mustard. Season with paprika, salt, and pepper.
    5. Stir well and serve on your favorite bread, crackers, or salad greens.

Notes

 
For the best texture, don't overcook the eggs — pull them off the heat the moment the water boils. Chop rather than mash for distinct bites, and let the mixed salad rest in the fridge for 15–20 minutes before serving so the flavors meld. Store leftovers in an airtight container in the fridge for 3–4 days; this recipe doesn't freeze well due to the mayonnaise base.
