Beat the eggs in a second bowl.
Place the panko breadcrumbs into a third bowl.
Coat each piece of chicken in the flour mixture, dip into the eggs, then coat completely with the panko breadcrumbs.
Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
Fry the chicken in batches for 4–5 minutes, turning occasionally until golden brown and cooked through.
Transfer the cooked chicken to a wire rack or paper towel-lined plate.
In a medium bowl whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
Toss the crispy chicken with the Bang Bang sauce until evenly coated.
Garnish with chopped green onions and sesame seeds before serving immediately.
