- 1 sheet puff pastry thawed
- 4 oz cream cheese softened
- 2 tbsp granulated sugar for the cream cheese filling
- 1 tsp vanilla extract
- 2 medium peaches peeled and diced
- 1 cup fresh blueberries
- 2 tbsp granulated sugar for the fruit filling
- 1 tsp fresh lemon juice
- 1 tbsp cornstarch
- 1 large egg beaten
- 1 tbsp milk
- 1 tbsp coarse sugar optional, for topping
- 1 tbsp powdered sugar optional, for dusting
Prepare the Fruit: Combine the diced peaches, blueberries, sugar, lemon juice, and cornstarch in a bowl. Toss gently until evenly coated.
Make the Filling: Beat the softened cream cheese with the sugar and vanilla until smooth and creamy.
Prepare the Pastry: Roll out the thawed puff pastry slightly and cut it into four equal rectangles.
Assemble: Spread the cream cheese mixture in the centre of each pastry, leaving a small border.
Add Fruit: Top the cream cheese with the prepared peach and blueberry mixture.
Seal: Fold or shape the pastries as desired and pinch the edges closed.
Egg Wash: Brush each pastry with the egg and milk mixture. Sprinkle with coarse sugar if desired.
Bake: Bake in a preheated 400°F (200°C) oven for 20–25 minutes, or until puffed and golden brown.
Cool: Allow the pastries to cool for about 10 minutes before serving.
Serve: Dust with powdered sugar and enjoy warm or at room temperature.
