Easy Chicken Caesar Pasta Salad

Ingredients
  

  • 1 (16-ounce) box mini penne pasta
  • pounds cooked chicken chopped
  • ½ cup green bell pepper diced
  • cup grated Parmesan cheese
  • cup red onion chopped
  • 2 large hard-boiled eggs chopped
  • ½ (8-ounce) bottle creamy Caesar salad dressing, or more to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the mini penne until al dente according to the package directions.
  • Drain the pasta, rinse under cold water, and let it cool completely.
  • In a large bowl, combine the cooled pasta, chopped chicken, diced green bell pepper, grated Parmesan cheese, chopped red onion, and chopped hard-boiled eggs.
  • Pour the Caesar dressing over the salad and gently toss until everything is evenly coated.
  • Cover and refrigerate for at least 30 minutes.
  • Toss again before serving and add extra dressing if desired.

  • Cook the pasta just until al dente for the best texture.
  • Chill the salad for at least 30 minutes before serving for the best flavor.
  • Add extra Caesar dressing before serving if the pasta absorbs some while refrigerated.
