Remove the crusts from the bread slices. Use a rolling pin to flatten each slice until thin and flexible.
In a small bowl, combine softened cream cheese, sugar, and cinnamon. Spread a thin layer of the mixture over each flattened bread slice.
Starting from one edge, tightly roll each slice into a log. Place the rolls seam-side down while preparing the coating.
Whisk together eggs, milk, vanilla extract, sugar, and cinnamon in a shallow bowl until smooth.
Quickly dip each bread roll into the egg mixture, turning gently so the outside is evenly coated. Avoid soaking the bread for too long.
Melt butter in a skillet over medium heat. Place the rolls seam-side down and cook, turning frequently, until golden brown on all sides.
Mix the finishing sugar and cinnamon together. Roll the warm French toast rolls in the cinnamon sugar until lightly coated.
Serve immediately with maple syrup and fresh berries, if desired.
