Easy & Delicious Nacho Style Hot Honey Taco Beef Bowls

Everything you love about nachos and tacos packed into one loaded bowl — seasoned ground beef, fluffy rice, crunchy tortilla chips, creamy avocado, and a drizzle of sweet-spicy hot honey that ties it all together.

Ingredients
  

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • ¼ cup water
  • 2 cups cooked rice white, brown, or cilantro-lime
  • 1 can black beans rinsed and drained
  • 1 cup sweet corn drained
  • 1 cup cheddar cheese freshly shredded
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • ¼ medium red onion finely chopped
  • 2 cups tortilla chips lightly crushed
  • ½ cup sour cream
  • ¼ cup fresh cilantro roughly chopped
  • 3 tbsp hot honey
  • 1 lime cut into wedges

Instructions
 

  • Cook the Rice — Prepare your rice according to the package instructions and keep it warm while you get everything else ready.
  • Brown the Beef — Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon until fully browned. Drain any excess grease.
  • Season the Beef — Add the taco seasoning and a splash of water to the skillet. Stir well and simmer for 3–5 minutes until the sauce thickens and coats the beef evenly.
  • Prep the Toppings — While the beef simmers, dice the avocado, halve the cherry tomatoes, chop the red onion, rinse the black beans, drain the corn, and lightly crush the tortilla chips.
  • Assemble the Bowls — Divide the warm rice between serving bowls. Top with seasoned beef, black beans, corn, cherry tomatoes, shredded cheddar, avocado, and red onion.
  • Add the Finishing Touches — Top each bowl with crushed tortilla chips, a dollop of sour cream, fresh cilantro, a generous drizzle of hot honey, and a squeeze of fresh lime juice. Serve immediately.

Notes

 
  • Shred your cheese fresh from the block for the best melt — pre-shredded has a coating that prevents it from melting smoothly.
  • Add the crushed tortilla chips right before serving so they stay crispy and don't go soggy.
  • Dice the avocado last to prevent browning.
  • Don't skip the lime squeeze at the end — it brightens every flavour in the bowl.
  • To make your own hot honey, warm honey in a small saucepan with dried chilli flakes, let it cool, and store in a jar for up to a few weeks.
  • Store beef and rice separately in airtight containers in the fridge for up to 4 days. Add fresh toppings at serving time only.
  • The seasoned beef can be frozen for up to 3 months — thaw overnight in the fridge and reheat before assembling.
