Ingredients
  

Chicken

  • lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil for cooking
  • ½ tsp salt or to taste
  • ¼ tsp black pepper freshly ground if possible

Sweet & Savory Glaze

  • ¼ cup soy sauce use low-sodium if preferred
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 2 cloves garlic minced
  • 1 tsp fresh ginger finely grated
  • 1 tsp sesame oil

Bowl

  • 3 cups cooked rice white or brown rice
  • 1 large ripe mango diced
  • 1 medium red bell peppe thinly sliced
  • 3 green onions sliced
  • 1 tbsp sesame seeds
  • ¼ cup fresh cilantro chopped
  • ¼ tsp red pepper flakes optional
  • 1 lime cut into wedges for serving

Instructions
 

  • Prepare the chicken. Pat the chicken dry and cut it into bite-sized pieces. Season with salt and black pepper.
  • Make the glaze. In a small bowl, whisk together soy sauce, honey, lime juice, minced garlic, grated ginger, and sesame oil until well combined.
  • Cook the chicken. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6–8 minutes, stirring occasionally, until golden brown and cooked through.
  • Add the glaze. Pour the prepared glaze over the cooked chicken. Stir well and simmer for 2–3 minutes, allowing the sauce to thicken and coat the chicken.
  • Prepare the fresh toppings. While the chicken cooks, dice the mango and slice the red bell pepper and green onions. Keep the mango raw for a fresh, juicy texture.
  • Assemble the bowls. Divide the cooked rice between four serving bowls. Add the glazed chicken, diced mango, sliced bell pepper, and green onions.
  • Finish and serve. Sprinkle with sesame seeds, fresh cilantro, and red pepper flakes if desired. Serve immediately with fresh lime wedges.

Notes

 
For the best flavor, use a ripe but firm mango so it stays juicy without becoming mushy. Fresh lime juice adds brightness and balances the sweetness of the honey and mango.
For meal prep, store the glazed chicken and rice separately from the fresh mango and toppings. Add the mango, cilantro, green onions, and sesame seeds after reheating.
For a lower-carb option, serve the glazed chicken and mango over cauliflower rice or a bed of mixed greens.
For extra heat, add additional red pepper flakes or drizzle the finished bowl with your favorite hot sauce.
Storage: Refrigerate leftovers in airtight containers for up to 3–4 days. The cooked chicken and rice can be frozen for up to 2–3 months. Reheat the chicken and rice until hot, then add the fresh mango and toppings afterward.
