- 2 tbsp olive oil
- 1 medium yellow onion diced
- 2 medium carrots peeled and diced
- 2 stalks stalks celer diced
- 3 cloves garlic minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup dried brown lentils rinsed
- 4 cups vegetable broth
- 1 tsp salt or to taste
- ½ tsp black pepper
- 2 tbsp fresh parsley chopped
- 1 tbsp fresh lemon juice
Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery and cook until softened, stirring occasionally.
Stir in the garlic, tomato paste, cumin, and thyme. Cook for about 1 minute until fragrant.
Add the rinsed lentils, vegetable broth, and bay leaf. Stir well to combine.
Bring the soup to a boil, then reduce the heat to low. Cover and simmer until the lentils are tender.
Remove the bay leaf. Stir in the salt, black pepper, parsley, and fresh lemon juice.
Taste and adjust seasoning if needed. Serve hot with crusty bread or a fresh green salad.
