There's a reason meatloaf has stuck around in home kitchens for generations — it's forgiving, filling, and built from things most people already have on hand. This version skips anything fussy and gets you from mixing bowl to dinner table without much fuss.

Total Time 1 hour hr 15 minutes mins
- 1 ½ pounds ground beef
- 1 large egg
- 1 onion chopped
- 1 cup milk
- 1 cup dried bread crumbs
- 1 tsp salt and pepper to taste
- ⅓ cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons prepared mustard
Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.2. In a large bowl, combine the ground beef, chopped onion, milk, bread crumbs, and egg. Season with salt and pepper, and mix gently until just combined. Press the mixture evenly into the prepared loaf pan.3. In a small bowl, whisk together the ketchup, brown sugar, and mustard until smooth. Spread evenly over the top of the meatloaf.4. Bake for about 1 hour, until the center is no longer pink and an instant-read thermometer reads at least 160°F (70°C).5. Let rest for 5–10 minutes before slicing. Serve hot.
- Avoid overmixing the meat for a tender texture.
- Letting the loaf rest before slicing helps it hold together.
- Leftovers keep in the fridge for 3–4 days or in the freezer for up to 3 months.
