Ingredients
  

  • 12 oz pasta – Penne spaghetti, or fettuccine
  • 2 cups broccoli – Cut into small florets
  • 1 medium bell pepper – Thinly sliced
  • 1 medium zucchini – Slice
  • 1 medium medium carrot – Thinly slice
  • 1 cup cherry tomatoes – Halved
  • 3 cloves garlic – Minced
  • 2 tbsp olive oil – For sautéing
  • 1 cup heavy cream – For the creamy sauce
  • ¾ cup Parmesan cheese – Freshly grated
  • 1 tsp Italian seasoning – Adds herb flavor
  • ½ tsp salt – Adjust to taste
  • ¼ tsp black pepper – Freshly ground if possible
  • 2 tbsp fresh parsley – Chopped for garnish
  • ½ cup pasta water – Reserved before draining as needed

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package directions. Reserve some pasta water, then drain the pasta.
  • Wash and chop the broccoli, bell pepper, zucchini, carrot, and cherry tomatoes into bite-sized pieces.
  • Heat olive oil in a large skillet over medium-high heat. Add the carrots and broccoli, followed by the bell pepper, zucchini, and cherry tomatoes. Sauté until the vegetables are tender-crisp. Add the minced garlic and cook until fragrant.
  • Reduce the heat and add the heavy cream. Stir in the Parmesan cheese and Italian seasoning until the cheese melts and the sauce becomes smooth and creamy.
  • Add the cooked pasta to the skillet. Toss gently until the pasta is evenly coated with the sauce and vegetables. Add a splash of reserved pasta water if the sauce is too thick.
  • Season with salt and freshly ground black pepper. Toss everything together and remove from the heat.
  • Garnish with fresh parsley and additional Parmesan cheese. Serve immediately while warm and creamy.

Notes

 
For the best texture, cook the pasta just until al dente and avoid overcooking the vegetables. Freshly grated Parmesan melts more smoothly into the sauce. Reserve some pasta water before draining so you can easily adjust the sauce consistency. Leftovers can be refrigerated in an airtight container and gently reheated with a splash of water, milk, or broth.
