Ingredients
  

  • 1 lb Italian sausage
  • 1 medium red bell pepper thinly sliced
  • 1 medium yellow bell pepper thinly sliced
  • 1 medium green bell pepper thinly sliced
  • 1 medium medium yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • 2 tbsp Parmesan cheese optional
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Prepare the ingredients. Slice the bell peppers and onion into thin strips. Mince the garlic and have the sausage, seasonings, cheese, and hoagie rolls ready.
  • Brown the sausage. Heat a large skillet over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it into smaller pieces if using loose sausage. Remove the sausage from the skillet and set aside.
  • Cook the peppers and onions. Add olive oil to the same skillet. Add the sliced bell peppers and onion and sauté until softened and lightly caramelized, stirring occasionally.
  • Add the garlic and seasonings. Stir in the minced garlic, Italian seasoning, salt, and black pepper. Cook for about 1 minute, until fragrant.
  • Combine the sausage and vegetables. Return the cooked sausage to the skillet and toss everything together. Cook for another 2–3 minutes so the flavors combine.
  • Toast the hoagie rolls. Slice the rolls open and lightly toast them in the oven or on a skillet until the edges are lightly golden.
  • Assemble the sandwiches. Divide the sausage and pepper mixture between the toasted rolls. Top each sandwich with a slice of provolone cheese. Add Parmesan if desired.
  • Melt the cheese and serve. Place the assembled sandwiches under the broiler briefly until the provolone is melted and bubbly. Garnish with fresh parsley and serve immediately.

  • Use mild Italian sausage for a family-friendly version or hot Italian sausage for extra spice.
  • A mix of red, yellow, and green bell peppers gives the sandwich great color and a balance of sweet and savory flavors.
  • Toasting the hoagie rolls helps prevent them from becoming soggy.
  • For extra-melty cheese, place the assembled sandwiches under the broiler for 1–2 minutes.
  • Store the sausage and pepper filling separately from the rolls for the best texture when reheating.
  • Serve with French fries, potato wedges, Italian salad, coleslaw, or roasted vegetables.
