Easy Scallops with Sweet Corn – Fresh and Flavorful

- 1 lb large sea scallops dry-packed preferred
- 2 cups fresh sweet corn kernels or frozen, thawed
- 2 tbsp butter divided
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 small shallot finely diced
- ½ tsp paprika
- ½ tsp salt or to taste
- ¼ tsp freshly ground black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley chopped
- 1 tbsp fresh chives chopped (optional)
- 4 lemon wedges for serving
Pat the scallops completely dry with paper towels. Remove the small side muscle if needed and season both sides with salt, pepper, and paprika.
Heat 1 tablespoon butter in a large skillet over medium heat. Add the shallot and cook until softened, about 2–3 minutes. Stir in the garlic, then add the sweet corn and cook for another 4–5 minutes. Transfer the corn mixture to a plate.
Add the olive oil to the same skillet over medium-high heat. Once hot, place the scallops in a single layer. Cook for about 2 minutes per side until golden brown. Avoid moving them while they sear.
Reduce the heat to medium-low. Return the corn mixture to the skillet along with the remaining butter. Add the lemon juice and gently stir until everything is heated through.
Sprinkle with chopped parsley and chives. Serve immediately with fresh lemon wedges.
