Salad
- 5 cups baby spinach fresh, washed and dried
- 1 cup fresh blueberries rinsed
- ½ cup feta cheese crumbled
- ⅓ cup pecans toasted
- ¼ red onion thinly sliced
Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp black pepper
Dry the spinach — Rinse baby spinach under cold water and dry thoroughly using a salad spinner or clean kitchen towel. Dry leaves hold the dressing far better.
Prep the toppings — Rinse the blueberries, slice the red onion as thinly as possible, crumble the feta, and toast the pecans in a dry skillet over medium heat for 2–3 minutes until fragrant.
Make the dressing — In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and well combined.
Assemble the salad — Add the spinach to a large serving bowl. Layer on the blueberries, red onion, crumbled feta, and toasted pecans.
Dress and toss — Pour the dressing over the salad just before serving and toss gently until everything is evenly coated.
