- 1 lb sirloin steak or ribeye
- 5 cups mixed salad greens
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- ½ red onion thinly sliced
- 1 avocado sliced
- ½ cup crumbled feta cheese
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 garlic clove minced
- 1 tsp honey
- 1 tsp salt divided
- ½ tsp black pepper divided
- 2 tbsp fresh parsley chopped
Pat the steak dry and season both sides with salt and black pepper. Let it rest at room temperature for 20 minutes.
Heat a cast iron skillet or grill pan over medium-high heat. Cook the steak for 4–5 minutes per side, or until it reaches your preferred doneness.
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, honey, a pinch of salt, and black pepper until well combined.
Add the mixed greens, cherry tomatoes, cucumber, red onion, avocado, and feta cheese to a large serving bowl.
Arrange the sliced steak over the salad.
Drizzle with the homemade balsamic dressing.
Garnish with chopped parsley and serve immediately.
