- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon optional
- ½ cup unsalted butter softened
- ¾ cup granulated sugar
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- ½ cup milk room temperature
- 2 cups fresh peaches peeled and sliced
- 1 tablespoon coarse sugar optional, for topping
- Powdered sugar optional, for dusting before serving
Prepare the Oven: Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan or line it with parchment paper.
Prepare the Peaches: Wash, peel if desired, remove the pits, and slice the peaches into bite-sized pieces.
Mix the Dry Ingredients: Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl.
Cream Butter and Sugar: Beat the butter and sugar until light and fluffy, about 2–3 minutes.
Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
Combine Everything: Alternately add the dry ingredients and milk to the butter mixture until just combined.
Fold in the Peaches: Gently fold the sliced peaches into the batter using a rubber spatula.
Fill the Pan: Spread the batter evenly into the prepared cake pan. Sprinkle coarse sugar over the top if desired.
Bake: Bake for 40–45 minutes, or until a toothpick inserted into the centre comes out clean.
Cool and Serve: Let the cake cool in the pan for 15 minutes before transferring it to a cooling rack. Dust with powdered sugar before serving if desired.
- Fresh peaches provide the best flavour and texture.
- If using frozen peaches, thaw and pat them dry before adding to the batter.
- Do not overmix the batter, or the cake may become dense.
