Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter melted and slightly cooled
  • 2 large large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup whole milk
  • ½ cup rainbow sprinkles

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  • In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and milk until smooth and well combined.
  • Pour the wet ingredients into the dry ingredients. Gently stir with a spatula just until the flour is incorporated. Do not overmix the batter.
  • Gently fold the rainbow sprinkles into the batter until they are evenly distributed.
  • Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  • Bake for 16–20 minutes, or until the muffin tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

  • Use baking-friendly rainbow sprinkles for the best color and texture.
  • Avoid overmixing the batter, as this can make the muffins dense.
  • Let melted butter cool slightly before combining it with the eggs.
