- 12 oz pasta
- 3 large yellow onions thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 3 cloves garlic minced
- 1 tsp fresh thyme
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup Gruyère cheese freshly grated
- ½ cup Parmesan cheese freshly grated
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 2 tbsp fresh parsley chopped
- ¼ cup reserved pasta water as needed
Thinly slice the yellow onions. Keeping the slices similar in thickness helps them cook evenly.
Heat the butter and olive oil in a large skillet over medium-low heat. Add the onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are very soft and deeply golden, about 20–25 minutes.
Add the minced garlic and fresh thyme to the caramelized onions. Cook for about 1 minute, until fragrant.
Pour in the beef broth and scrape the bottom of the skillet with a wooden spoon to release the flavorful browned bits. Stir in the heavy cream and bring the sauce to a gentle simmer.
Meanwhile, cook the pasta in salted water according to the package directions until al dente. Reserve a little pasta water, then drain.
Add the cooked pasta to the creamy onion sauce. Toss well until the pasta is completely coated. Add a splash of reserved pasta water if the sauce is too thick.
Reduce the heat to low. Add the Gruyère and Parmesan cheese gradually, stirring until the cheeses melt and the sauce becomes smooth and creamy.
Season with freshly ground black pepper and additional salt if needed. Garnish with fresh parsley and extra grated Parmesan or Gruyère before serving.
