Fresh Greek Blueberry Yogurt Salad – Creamy and Flavorful
This Fresh Greek Blueberry Yogurt Salad is a creamy, refreshing, and easy no-cook recipe made with juicy blueberries, thick Greek yogurt, honey, lemon, and fresh mint. Perfect for breakfast, brunch, a light snack, or a refreshing summer dessert.
Prep Time 10 minutes mins
Total Time 10 minutes mins
- 4 cups fresh blueberries washed and thoroughly dried
- 3 cups plain Greek yogurt
- 3 tbsp honey adjusted to taste
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 2 tbsp fresh mint leaves finely chopped
- ½ cup granola optional
- ⅓ cup chopped almonds or walnuts optional
Rinse the blueberries under cool water and drain them well. Gently pat them dry with paper towels to remove excess moisture.
Add the Greek yogurt, honey, lemon juice, lemon zest, and vanilla extract to a large mixing bowl. Stir until smooth and creamy.
Add the blueberries to the yogurt mixture and gently fold them in with a spatula. Avoid overmixing so the berries stay mostly whole.
Finely chop the fresh mint leaves and gently fold them into the blueberry yogurt mixture. Reserve a few mint leaves for garnish.
Cover the bowl and refrigerate for about 20 to 30 minutes so the salad becomes nicely chilled and the flavors can blend.
Transfer the chilled salad to a serving bowl. Top with fresh blueberries, mint, granola, and chopped nuts if desired, then serve immediately.
- For the creamiest texture, use thick plain Greek yogurt and make sure the blueberries are completely dry after washing. Adjust the honey according to the sweetness of your berries and personal preference.
- For extra crunch, add granola, chopped almonds, or walnuts just before serving. Keep crunchy toppings separate if you plan to store leftovers.
- This blueberry yogurt salad is best served chilled and is perfect for breakfast, brunch, summer gatherings, picnics, or a light no-bake dessert.
