Ingredients
  

  • 2 lb Russet potatoes peeled
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley finely chopped
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 2 eggs divided
  • 1 cup all-purpose flour
  • 2 cups panko breadcrumbs or regular breadcrumbs
  • 3 cups vegetable oil for frying

Instructions
 

  • Peel the potatoes and boil them until fork tender. Drain thoroughly and mash until smooth.
  • Stir in the minced garlic, parsley, mozzarella, Parmesan, salt, pepper, garlic powder, onion powder, and one egg until fully combined.
  • Roll the potato mixture into evenly sized balls.
  • Chill the potato balls for about 20 minutes to help them hold their shape.
  • Place flour in one bowl, beat the remaining egg in another bowl, and add breadcrumbs to a third bowl.
  • Coat each potato ball in flour, dip into the beaten egg, then cover completely with breadcrumbs.
  • Heat vegetable oil to 350°F (175°C).
  • Fry the potato balls in batches for 3–4 minutes or until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Garnish with fresh parsley and serve immediately with garlic aioli, ranch, marinara, or your favorite dipping sauce.

  • Russet potatoes create the fluffiest texture.
  • Chill before frying to prevent breaking apart.
  • Don't overcrowd the fryer.
  • Panko breadcrumbs produce the crispiest coating.
  • Keep the oil around 350°F (175°C) for even cooking.
  • Air Fryer: Cook at 390°F (200°C) for 12–15 minutes, flipping halfway through.
  • Oven: Bake at 425°F (220°C) for 25–30 minutes, turning once for even browning.
