- 2 cups fresh strawberries hulled
- 2 cups unsweetened almond milk
- ½ cup chia seeds
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp fresh lemon juice
- 1 pinch salt optional
- Fresh strawberries for topping (optional)
- Granola for topping (optional)
- Fresh mint leaves for garnish (optional)
Wash and hull the strawberries. Blend until smooth.
Add the strawberry puree, almond milk, chia seeds, maple syrup, vanilla extract, lemon juice, and salt to a mixing bowl.
Whisk everything together until the chia seeds are evenly distributed.
Let the mixture rest for about 10 minutes, then stir again to prevent clumping.
Divide the mixture into serving jars or containers.
Cover and refrigerate for at least 4 hours or overnight until thick and creamy.
Stir before serving if needed.
Top with fresh strawberries, granola, or fresh mint and enjoy.
