Homemade Blueberry and Oat Breakfast Bars – Soft and Fruity

Soft and fruity homemade blueberry oat breakfast bars made with rolled oats, juicy blueberries, and a lightly sweetened buttery mixture. Perfect for easy breakfasts, meal prep, lunchboxes, or an afternoon snack.

Ingredients
  

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter melted and slightly cooled
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 ½ cups fresh blueberries

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • In a large bowl, combine the rolled oats, all-purpose flour, baking powder, cinnamon, and salt. Stir until evenly combined.
  • In a separate bowl, whisk together the melted butter, brown sugar, granulated sugar, egg, vanilla extract, and lemon juice until smooth.
  • Gradually add the dry ingredients to the wet mixture. Stir gently with a spatula until everything is just combined. Do not overmix.
  • Gently fold the blueberries into the oat mixture. If using frozen blueberries, add them directly from frozen without thawing.
  • Transfer the mixture to the prepared baking pan. Spread it evenly and gently press the mixture into the corners using a spatula or the back of a spoon.
  • Bake for 23–27 minutes, or until the edges are lightly golden and the center is set.
  • Remove the pan from the oven and allow the bars to cool completely before slicing. Use the parchment paper to lift the bars from the pan, then cut into 12 bars.

Notes

 
  • Fresh or frozen blueberries can be used in this recipe.
  • If using frozen blueberries, don't thaw them before adding them to the mixture.
  • Allow the bars to cool completely before slicing so they hold their shape.
  • For a softer texture, avoid overbaking the bars.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • The bars can be individually wrapped and frozen for up to 3 months.
  • For a warm breakfast, microwave a refrigerated bar for about 10–20 seconds before serving.
  • Serve with Greek yogurt, fresh fruit, nut butter, or a cup of coffee for a simple breakfast.
