Ingredients
  

  • 2 tablespoons olive oil
  • pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup barbecue sauce
  • 3 tablespoons honey
  • 2 cups uncooked long-grain white rice
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese optional
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken with paprika, garlic powder, onion powder, salt, and black pepper.
  • Add the chicken to the hot skillet and cook for 6 to 8 minutes until browned and fully cooked.
  • Stir the barbecue sauce and honey into the skillet. Simmer for 3 to 4 minutes until the sauce thickens slightly.
  • Meanwhile, cook the rice in chicken broth according to the package directions.
  • Fluff the cooked rice with a fork and add it to the skillet.
  • Stir everything together until the rice is evenly coated in the honey BBQ sauce.
  • Sprinkle the shredded cheddar cheese over the top, if using, and let it melt.
  • Garnish with fresh parsley and serve warm.

  • Chicken thighs can be substituted for chicken breasts.
  • Add corn, peas, or diced bell peppers for extra vegetables.
  • Rotisserie chicken works great for a faster meal.
