Bang Bang Sauce

  • ½ cup mayonnaise for a creamy sauce base
  • ¼ cup sweet chili sauce for sweetness and mild heat
  • 1 tablespoon sriracha adjusted to taste
  • 1 tablespoon honey to balance the spice
  • 1 tablespoon lime juice for freshness and acidity

Garnish

  • 2 tablespoons green onions thinly sliced for serving

Instructions
 

  • Prepare the Chicken: Cut the chicken into evenly sized bite-sized pieces. Add the chicken to a large bowl and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
  • Thread the Skewers: Thread the seasoned chicken pieces onto the skewers, leaving a small amount of space between each piece. If using wooden skewers, soak them in water beforehand.
  • Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the chicken skewers for about 12–15 minutes, turning occasionally, until golden and cooked through.
  • Make the Bang Bang Sauce: While the chicken cooks, whisk mayonnaise, sweet chili sauce, sriracha, honey, and lime juice together in a small bowl until smooth and creamy.
  • Add the Sauce: Brush the cooked chicken skewers generously with the bang bang sauce. Reserve some sauce for dipping or drizzling when serving.
  • Garnish and Serve: Transfer the skewers to a serving platter and sprinkle with sliced green onions. Serve immediately with extra bang bang sauce on the side.

  • For the juiciest chicken, cut the pieces into similar sizes so they cook evenly. Avoid overcrowding the skewers, as a little space between the chicken pieces helps them brown nicely.
  • Adjust the amount of sriracha according to your preferred spice level. For an extra-creamy finish, serve with additional bang bang sauce on the side.
