Total Time 30 minutes mins
- 12 ounces leftover cooked spaghetti
- 2 large eggs
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup marinara sauce
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley chopped
- 1 tablespoon olive oil for greasing the muffin pan
Prepare the leftover spaghetti: Place the chilled leftover spaghetti in a large mixing bowl. Gently separate the noodles with a fork so they are not stuck together.
Mix the pasta ingredients: Add the eggs, mozzarella, Parmesan, marinara sauce, Italian seasoning, garlic powder, salt, and black pepper. Toss gently until the spaghetti is evenly coated and everything is well combined.
Grease the muffin pan: Lightly grease each cup of a 12-cup muffin pan with olive oil or cooking spray. Make sure the bottoms and sides are coated well to prevent sticking.
Fill the muffin cups: Divide the spaghetti mixture evenly among the muffin cups. Twist the noodles into small nests and gently press them into each cup.
Bake until golden and crispy: Bake in a preheated 375°F oven for about 18–20 minutes, or until the spaghetti muffins are set and the edges are golden brown and crispy.
Cool and serve: Let the spaghetti muffins cool in the pan for a few minutes. Gently loosen the edges with a small spatula, remove the muffins, and garnish with fresh parsley before serving.
- Chilled leftover spaghetti works particularly well because the noodles are easier to shape.
- Avoid adding too much marinara sauce, as excess moisture can prevent the edges from becoming crispy.
- Grease the muffin pan thoroughly for easier removal.
- For extra crispy edges, allow the muffins to bake until deeply golden around the sides.
- You can customize these pasta bites with cooked chicken, sausage, spinach, mushrooms, bell peppers, or additional cheese.
- Serve with warm marinara sauce for dipping.
- Refrigerate leftovers within 2 hours and reheat until they reach 165°F.
