Ingredients
  

For the Steak Bites:

  • 1 ½ lbs Sirloin steak Cut into 1-inch bite-sized cubes
  • 3 cloves Garlic Minced (add more if desired)
  • 2 tbsp Olive oil Divided
  • 2 tbsp Fresh lemon juice
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme Or 1 tbsp fresh thyme
  • 1 tsp Dried parsley Or 1 tbsp fresh parsley
  • ½ tsp Kosher salt Adjust to taste
  • ½ tsp Black pepper Freshly ground
  • ½ tsp Paprika
  • 1 cup Cherry tomatoes Halved
  • ½ cup Feta cheese Crumbled, for topping

For the Yogurt Sauce:

  • 1 cup Plain Greek yogurt
  • 1 tbsp Fresh lemon juice
  • 1 clove Garlic Minced
  • 1 tbsp Fresh parsley Finely chopped
  • ¼ tsp Salt Adjust to taste
  • 1 Olive oil

Instructions
 

  • Group 1: Make the Yogurt Sauce
    1. Combine the Greek yogurt, lemon juice, minced garlic, chopped parsley, and salt in a small bowl. Stir until smooth and well blended.
    2. Drizzle olive oil over the top, cover, and refrigerate until ready to serve. The sauce can be made up to 2 days ahead.
    Group 2: Marinate the Steak
    3. Pat the steak cubes dry with paper towels and place them in a large mixing bowl.
    4. Add the minced garlic, olive oil, lemon juice, oregano, thyme, parsley, paprika, salt, and black pepper. Toss until every piece is evenly coated.
    5. Let the steak marinate for at least 15 minutes at room temperature, or cover and refrigerate for up to 4 hours for deeper flavor. Do not exceed 4 hohours,s the lemon juice can break down the meat texture.
    Group 3: Cook the Steak Bites
    6. Heat a large cast iron skillet or heavy-bottomed pan over high heat until very hot. Add 1 tablespoon of olive oil and swirl to coat.
    7. Add the marinated steak bites in a single layer, being careful not to overcrowd the pan. Work in batches if needed.
    8. Sear without moving for 1–2 minutes until a deep golden crust forms, then flip and cook for another 1–2 minutes for medium doneness.
    9. In the last 30 seconds of cooking, add the halved cherry tomatoes to the pan and toss gently to warm through.
    10. Remove the pan from heat just before the steak reaches your desired doneness — it will continue cooking slightly off the heat.
    Group 4: Serve
    11. Transfer steak bites and tomatoes to a serving plate or individual bowls.
    12. Crumble feta cheese generously over the top.
    13. Drizzle or serve alongside the chilled yogurt sauce.
    14. Garnish with extra fresh parsley and a wedge of lemon if desired. Serve immediately over rice, in pitas, or over salad.

Notes

  • Steak Choice: Sirloin is the most economical option here, but strip steak, flank, or ribeye all work beautifully. Just make sure to cut against the grain for the most tender bites.
  • Marinade Tip: If you only have 10–15 minutes to marinate, go for it — flavor will still come through. Longer is better, but don't stress if time is tight.
  • Don't Crowd the Pan: A hot, uncrowded skillet = a proper sear. If the steak bites are too close together, they'll steam rather than brown.
