Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • 4 tbsp unsalted butter melted
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh peaches finely diced
  • ¼ cup peach preserves optional

Instructions
 

  • Preheat the oven to 350°F. Line a mini muffin pan with paper liners.
  • Combine the graham cracker crumbs and melted butter until evenly moistened. Press the mixture firmly into the bottom of each liner.
  • Beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the sour cream and vanilla extract. Mix until combined, then gently beat in the egg until the filling is smooth.
  • Fold the diced peaches gently into the cheesecake mixture.
  • Spoon the peach cheesecake filling over each prepared crust, filling the liners almost to the top.
  • Bake for about 18 minutes, or until the cheesecake centers are mostly set with a slight jiggle.
  • Remove from the oven and allow the cheesecake bites to cool completely.
  • Refrigerate until thoroughly chilled. Top with small peach pieces or a little peach preserves before serving.

Notes

 
  • Use room-temperature cream cheese for a smooth, lump-free cheesecake filling.
  • Choose ripe, juicy peaches for the best flavor and natural sweetness.
  • If using canned peaches, drain them very well to prevent excess moisture.
  • Avoid overmixing the batter after adding the egg to help prevent cracks.
  • Do not overbake the cheesecake bites. The centers should have a slight jiggle when removed from the oven.
  • Allow the bites to cool completely and chill before serving for the creamiest texture.
  • For an extra peach flavor, add a small spoonful of peach preserves on top before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
  • These cheesecake bites can be frozen for up to 2 months. Thaw them overnight in the refrigerator before serving.
