- ½ cup unsalted butter 1 stick
- 2 cups granulated sugar
- ½ cup milk dairy-free unsweetened works too
- ¼ cup unsweetened cocoa powder Dutch-process for deeper flavor
- ¾ cup creamy peanut butter Jif or Skippy recommended
- 1 tsp pure vanilla extract
- ¼ tsp kosher salt
- 3 cups quick oats
Line two baking sheets with parchment paper or silicone mats and set aside.
In a large saucepan over medium heat, combine the butter, milk, sugar, and cocoa powder. Stir occasionally and bring the mixture to a full rolling boil.
Once boiling, set a timer and let it boil for exactly 1 minute without stopping. Remove from heat immediately.
Stir in the peanut butter, vanilla extract, and salt until the mixture is completely smooth.
Fold in the quick oats until just combined — do not overmix.
Let the mixture rest for 1 minute, then quickly drop rounded spoonfuls onto the prepared baking sheets.
Allow cookies to set at room temperature for 20–30 minutes until firm. Serve and enjoy!
