Ingredients

For the Feta Rolls

  • 8 oz feta cheese crumbled
  • 8 sheets phyllo pastry thawed
  • 2 tbsp olive oil for brushing
  • 1 tsp fresh thyme chopped (or oregano)
  • ¼ tsp black pepper
  • 1 tsp lemon zest optional
  • 1 tbsp sesame seeds optional

For the Chili Honey

  • ¼ cup honey
  • ½ tsp red chili flakes
  • 1 tsp lemon juice optional

Instructions

  • Prepare the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Thaw the phyllo pastry according to the package instructions and keep unused sheets covered with a slightly damp kitchen towel.
  • Prepare the Feta Filling: Crumble the feta cheese into a mixing bowl. Add the chopped thyme or oregano, black pepper, and optional lemon zest. Mix gently until the herbs are evenly distributed.
  • Fill and Roll the Pastry: Lay a phyllo sheet on a clean work surface and brush lightly with olive oil. Add another sheet on top if desired. Cut the pastry into strips, place a small amount of feta filling near one end, fold in the sides, and roll into neat cylinders. Avoid overfilling.
  • Arrange the Rolls: Place the rolls seam-side down on the prepared baking sheet, leaving a little space between them. Brush the tops lightly with olive oil and sprinkle with sesame seeds if desired.
  • Bakeuntil golden: Bake for 15–20 minutes, or until the pastry is crisp, flaky, and golden brown. Keep an eye on the rolls toward the end of baking because phyllo pastry can brown quickly. Remove from the oven and let them rest briefly.
  • Prepare the Chilli Honey: Add the honey and red chili flakes to a small saucepan. Warm over low heat for 2–3 minutes, stirring gently. Do not let the honey boil. Remove from the heat and stir in the optional lemon juice.
  • Drizzle and Serve: Arrange the warm feta rolls on a serving platter. Drizzle with the chili honey and garnish with fresh thyme or a light sprinkle of flaky sea salt if desired. Serve immediately while the pastry is crispy and the feta filling is warm.

Notes

  • Keep phyllo covered: Unused pastry sheets dry out quickly and may crack while rolling.
  • Avoid overfilling: Use a small amount of feta in each roll to prevent leakage.
  • Adjust the heat: Add more or fewer chili flakes to customize the honey.
  • Serve immediately: The rolls are crispiest when freshly baked and drizzled just before serving.
  • Make ahead: Assemble the rolls in advance and refrigerate briefly before baking. Keep the chili honey separate until serving.
  • Storage: Refrigerate leftover baked rolls in an airtight container for up to 3 days. Reheat in an oven at 350°F (175°C) until crisp and hot.
  • Freezing: Freeze assembled, unbaked rolls for up to 2 months for best quality. Bake from frozen, allowing extra time as needed.
