For the Cake
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- 2 cups fresh peaches peeled and diced
Vanilla Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, then mix in the vanilla extract and sour cream until smooth.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold the diced peaches gently into the batter.
Spread the batter evenly into the prepared baking pan.
Bake for 38–42 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the cake to cool in the pan for about 15 minutes before transferring it to a cooling rack.
Whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the vanilla glaze over the cooled cake.
